Rare Edo p Japanese Makimono Hand Scroll, Cutting Sushi
A long hand scroll showing in hand-painted detail the methods of preparing a wide variety of animals dated An-Ei 4 (1775) and enclosed in an ancient wooden box titled Shijo-ka Ryu, Go-To Soroe Hidensho (Honorable Methods of Cutting, Secrets of the Shijo Style). The first section seems to be detailing methods of cutting fish for certain ceremonies. Second is a section on identifying various types of fishes used and detailed instructions on preparation of the parts. Most interesting of all is a third very detailed section on the preparation of many types of birds, including duck, pheasant and crane. The scroll is after dated 1775 and signed Suzuki Jinbei. The scroll is 7 inches (18 cm) wide, over 32 feet (9.8 meters) long. There is a great deal of worming and the paper has been loosely attached to a sheer backing paper for conservation.
